January 2010

This month’s recipe is something different that I am anxious to try out. It was sent in by Marlene Hawley of Colorado Springs. Marlene writes, “Whenever I serve this FABULOUS recipe, I am always asked for a copy. I hope you like it!”  If you have a recipe you would like to share, please send it to MVEA, Attn: Deborah Skillicorn, 11140 E. Woodmen Rd., Peyton, CO 80831. Curry Rounds

Combine:
3 cups grated sharp cheddar cheese
½ cup plus 2 tablespoons mayonnaise (not salad dressing)
1 ½ teaspoons curry powder
2/3 cup chopped green onions
1 (4.5 oz) can chopped black olives, drained.

At serving time, spread mixture on Melba rounds and bake at 400 degrees for 6 minutes or until cheese is melted.  You can make mixture a day ahead of your party and refrigerate.

In a mixing bowl, cream butter and sugar, Beat in egg, sour cream, honey and vanilla. combine dry ingredients and gradually add to creamed mixture. Cover and chill two hours or until the dough is easy to handle.

On a lightly floured surface, roll out dough to 1/8 inch thickness. Cut with 3-inch cookie cutters dipped in flour. Place 1 inch apart on ungreased baking sheets. Bake at 325 degrees for 8 - 10 minutes or until lightly brown. Remove from baking sheet and cool on wire rack. Makes about 8 dozen cookies.
